Ingredients
4 large eggs
1/2 cup granulated sugar
1/3 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Pinch of salt
1 cup whipped cream or buttercream (for filling)
1 cup chocolate ganache (for topping)

Instructions
Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
In a bowl, beat eggs and sugar together until pale and fluffy (about 4–5 minutes).
Sift in flour, cocoa powder, baking powder, and salt. Fold gently until just combined.
Pour the batter into the prepared pan and spread it evenly.
Bake for 10–12 minutes until the cake springs back lightly when touched.
While warm, invert the cake onto a clean towel or parchment paper. Roll it up gently (with the towel) and let it cool completely.
Unroll the cooled cake, spread with whipped cream or buttercream filling, and roll it back up tightly.
Chill for 30–60 minutes to set.
Frost the outside with chocolate ganache, drag a fork over the surface for a bark effect, and decorate as desired.
Notes
Dust with powdered sugar to mimic snow.
Garnish with sugared cranberries, rosemary sprigs, or meringue mushrooms.
Store in the fridge for up to 3 days.
Slice with a sharp serrated knife for best results.
