Sweet coconut sticky rice and ripe mango wrapped in soft rice paper for a colorful, chewy handheld dessert.

  • Total Time: 1 hour 5 minutes
  • Yield: 8 rolls

Ingredients

Coconut Sticky Rice

  • 1 cup glutinous rice
  • 1 cup full-fat coconut milk
  • ¼ cup granulated sugar
  • ¼ teaspoon salt

Rolls

  • 2 ripe mangoes, peeled and cut into thin strips
  • 8 rice paper wrappers
  • Warm water, for softening the wrappers

Optional Garnishes

  • Toasted sesame seeds
  • Shredded coconut
  • Extra coconut sauce
  • Fresh mint
  • Lime zest

Instructions

  1. Rinse the glutinous rice until the water runs mostly clear, then cook it according to the package directions.
  2. Warm the coconut milk, sugar, and salt in a saucepan until the sugar dissolves. Do not let the mixture boil heavily.
  3. Stir most of the coconut mixture into the warm rice. Cover and let it rest until the rice absorbs the liquid and becomes glossy.
  4. Prepare the mango by cutting it into thin, even strips.
  5. Dip one rice paper wrapper briefly in warm water, then place it on a clean damp surface.
  6. Arrange mango strips and a narrow line of coconut sticky rice near the lower third of the wrapper.
  7. Fold in the sides, then roll tightly while keeping the filling centered. Repeat with the remaining wrappers.
  8. Serve immediately with extra coconut sauce, sesame seeds, or shredded coconut.

Notes

  • Use glutinous or sweet rice, not standard long-grain rice.
  • Choose ripe mangoes that feel tender but not mushy.
  • Let the sticky rice cool slightly before rolling so it does not weaken the wrappers.
  • Soften rice paper only until flexible because it continues to soften as it rests.
  • Keep finished rolls separated with parchment paper.
  • These rolls taste best on the day they are assembled.
  • Store leftovers covered in the refrigerator and let them sit briefly at room temperature before serving.
