Ingredients

  • 1 (16 oz) package shelf-stable gnocchi
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup shredded carrots

  • 1/4 cup crumbled feta (optional)
  • Salt and pepper, to taste
  • Fresh lemon juice or vinaigrette, for dressing

Instructions

  1. Heat olive oil in a large nonstick skillet over medium-high heat.
  2. Add gnocchi in a single layer and cook undisturbed for 3–4 minutes.
  3. Flip and cook another 3–4 minutes, until golden and crisp on all sides.
  4. Remove from heat and season with salt and pepper.
  5. In a large bowl, combine tomatoes, cucumber, onion, carrots, and greens.
  6. Add warm gnocchi to the bowl and toss gently.
  7. Drizzle with lemon juice or your favorite vinaigrette.
  8. Top with toasted seeds and optional feta.
  9. Serve immediately while warm and crisp.

Notes

  • For a protein boost, add grilled chicken or crispy chickpeas.
  • Use vegan feta or omit cheese to keep it dairy-free.
  • Best enjoyed fresh gnocchi loses crispness if stored too long.
