Ingredients
For the Dough:
- 1 cup warm milk
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 3 1/2 cups all-purpose flour
- 1/2 teaspoon salt
For the Cinnamon Filling:
- 1/3 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
For the Cookie Dough Spread:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heat-treated all-purpose flour
- 2 tablespoons milk
- 1/2 cup mini chocolate chips
For the Icing:
- 4 ounces cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 to 2 tablespoons milk
Instructions
- Add warm milk, yeast, and sugar to a large bowl. Let it sit for 5 to 10 minutes, until foamy.
- Add melted butter, egg, flour, and salt. Mix until a soft dough forms.
- Knead the dough for 6 to 8 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover it, and let it rise until doubled in size.
- In a small bowl, mix softened butter, brown sugar, and cinnamon for the cinnamon filling.
- In another bowl, beat softened butter, brown sugar, granulated sugar, vanilla, heat-treated flour, milk, and mini chocolate chips until spreadable.
- Roll the dough into a large rectangle on a lightly floured surface.
- Spread the cinnamon filling over the dough, then gently spread the cookie dough mixture on top.
- Roll the dough tightly into a log and slice into 12 rolls.
- Place the rolls in a greased baking dish. Cover and let them rise for 30 to 45 minutes.
- Bake at 350°F for 22 to 25 minutes, or until golden and cooked through.
- Beat the cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
- Spread the icing over the warm rolls and serve.
Notes
- Use heat-treated flour for the cookie dough spread.
- To heat-treat flour, bake it at 350°F for about 5 minutes, then cool completely before using.
- Do not spread the cookie dough layer too thick, or the rolls may bake unevenly in the center. For softer rolls, avoid adding too much extra flour while kneading.
